| I tried this recipe yesterday and it was well received. I'm posting the original recipe but I substituted as indicated. Turkey Shepherd’s Pie with Mashed Sweet Potatoes 8 servings
3 tablespoons olive oil (or 1 1/2 tbsp of oil if you're using leftover cooked turkey) ½ pound brown or white mushrooms, thinly sliced 1 medium leek, white and pale green part only, cut in half lengthwise, washed and thinly sliced 1 medium carrot, grated 2 garlic cloves, minced 2 teaspoons dried crumbled sage 3 pounds sweet potatoes, peeled and cubed (I used leftover sweet potatoes from Thanksgiving) 1 3⁄4 pounds lean ground turkey (I used 3 to 4 cups of leftover cooked turkey) 1 28-oz. can tomato sauce 1 cup frozen peas salt and freshly ground black pepper to taste ¼ cup melted butter ½ cup buttermilk (I added 1 1/2 tsp of lemon juice to 1/2 cup of milk and let it stand for 5 minutes instead of buttermilk) chopped fresh parsley, for garnish
Heat 11⁄2 tablespoons of the oil in a large skillet set over medium heat. Add the mushrooms, leeks, carrot and garlic and cook until softened, about 5 minutes. Mix in the sage and remove from the heat. Place the sweet potatoes in a pot, cover with a generous amount of cold water, and boil until very tender. (I used leftovers instead) While the sweet potatoes cook, heat the remaining oil in a pot set over medium to medium-high heat. Add the turkey and cook, stirring frequently, until the meat is entirely cooked through and crumbly. (I used leftovers instead) Drain any fat or liquid from the meat. Mix in the leek mixture, tomato sauce, peas, salt and pepper. Spoon the mixture into a deep-sided, 9-x-13-inch or similar-sized casserole.
When tender, drain the sweet potatoes well. Thoroughly mash and then mix in the butter, buttermilk, salt and pepper. Spread the sweet potatoes over the turkey filling. Bake at 350 F for 55 to 60 minutes, or until potatoes are golden and filling is bubbling. _________________ In combat or competition, where the stress levels are highest, you do not rise to the occasion… you sink to the level of your training.
