Stuffed Rice Croquettes (Crochetti Di Riso Ripieno) 1 Cup uncooked regular rice.
2 Eggs
1 Tablespoon finely snipped parsley
1/2 cup grated Parmesan cheese
Dash cayenne pepper
1/4 pound mozzarella cheese cut in 8 to 12 strips 2 inches long
All purpose Flour
1 Tablespoon water
Fine breadcrumbs
Cooking oil for deep frying
Cook rice as package directs until tender and all water is absorbed. Cool slightly.
Beat 1 egg; stir in parsley, Parmesan cheese and cayenne. Pour over rice stir well. Set aside to cool.
Shape mixture into rolls with a strip of mozzarella in the centre of each. Dip in flour; place on wire rack and let dry about 1 hour.
In shallow bowl, beat reamaining egg and water. Dip croquetts into egg and then coat with breadcrumbs.
Pour oil into deep fryer or heavy pan to a depth of 2 inches, heat oil to 390.
Fry croquettes, a few at a time, until golden brown, about 2 minutes on each side. Drain on paper towels. Serve with tomato sauce.
