| I tried a new recipe the other night, and it turned out so well I thought I'd share it with you. It's really easy to do, too. I browned the meat and veggies and assembled the casserole before work and stuck it in the fridge. Then, that evening, all I had to do was stop by the house after work and pop it in the oven. When I got home from my granddaughter's volleyball game, an hour and half later, everything was hot and steaming -- and yummy! This one's going in my "keeper" file. Enjoy!Stuffed Pepper CasserolePackage of Dole cole slaw blend 1 lb. ground beef (I used 19 oz. ground white meat turkey)
1/2 c. onion, cut up (I used one whole onion, chopped) 1 green pepper (chopped) 1 T. olive oil 1 t. salt (I used Morton's salt substitute)
3 T. uncooked rice (I used 1/2 cup brown rice)1 (10 1/2 oz.) can condensed Healthy Request tomato soup 1 (8 oz.) can tomato sauce (I used 16 oz.)3/4 c. water Brown beef in oil with onion, pepper, salt and rice. Spread slaw on the bottom of a casserole dish. Top with beef mixture. Combine tomato soup and water then add tomato sauce. Pour over top of casserole. Bake for 60 to 90 minutes at 350. Number of Servings: 8. NOTE: I baked for 90 minutes.

| Interesting. I'm always looking for ground beef recipes. LOL - as I read it, I thought.. a little cinnamon added would make it a middle eastern dish. |
