I've been making these so often, lately, and I thought you might enjoy them, too! They're so quick and easy! Feel free to change up the seasonings as you wish, but I love the cumin/chili powder combo. Ground chipotle pepper is good, too.

Spicy Baked Sweet Potato 'Fries'

2 medium sweet potatoes, washed and cut (lengthwise) into strips (1/3" or so on each side)
1 1/2 T. olive oil
1 t. ground cumin
1/2 t. chili powder
1/4 t. salt (I use Morton's salt substitute, instead)
1/2 t. onion powder (I often use garlic powder)

Line cookie sheet with aluminum foil or parchment paper, for easy clean-up. Preheat oven to 450° F.

In a small mixing bowl, combine all ingredients. Mix to evenly coat potato strips. Place potato strips on lined cookie sheet (allow space between individual strips for even cooking). Bake for 15-20 minutes (or until potatoes become golden) turning strips every 5 to 7 minutes (or as needed). Makes 4 servings.
