 Spaghetti Sauce

PostSubject: Spaghetti Sauce   September 15th 2009, 6:16 pm

I canned spaghetti sauce this past weekend....maybe should be called marinara sauce as I left some of the tomatoes chunky. If I do say so myself, it is to die for. It was my first attempt at spaghetti sauce...I will do it again.

Wow Granny! That's fantastic. Our tomato plants didn't do well this year with all the rain. Oh, and I haven't canned in a long time. Just the thought of home grown, homemade makes my mouth water. Enjoy!

How nice to see that someone's getting back to cooking! Cooking kind of got put on hold during Big Brother, didn't it?

How do you make your spaghetti sauce, Granny? I love marinara! I grew up on a farm, and my grandma used to make everything from scratch, including ketchup! I spent many summers watching and helping her freeze and can the "fruits of her labors." I just wish I had taken better notes on how to do it, myself. You don't think of that when you're 12 years old, though, do you?

Well, Inky, I took two recipes..... took what I wanted from each.....added some of my own....walla.....my spaghetti sauce. If you want more details I could come close to what I did. I probably should write it down. Sauce is so much to the individual's taste.

I'd love to read it too Granny .... I have a basic marinara sauce that I've been making for decades and using for a lot of different things but I'm always open to new twists on an old favourite.

Here is my recipe for Spaghetti Sauce

CANNED SPAGHETTI SAUCE

1 cup oil (I used olive oil)
1 cup finely chopped celery
1 cup finely chopped green pepper
2 cups finely chopped onion
2 tablespoons minced garlic
I added 4 jalapeno peppers finely chopped (in fact, I chopped all veg. with a chopper)

Saute onions, celery, peppers in oil for 15 minutes, stirring frequently. Add garlic, cook 2 minutes longer.

18 cups mashed tomatoes ( I mashed with my potato masher after blanched and seeded)
13 cups tomato puree
1 teaspoon basil
1 teaspoon oregano
1 bay leaf
Non-iodized salt (I used sea salt) and pepper to taste
1 tablespoon sugar
1/2 teaspoon pepper flakes (or more if desired)
1 tablespoon parsley


Add all ingredients to stainless steel or enamel covered pot and simmer uncovered for at least 2 hours, until the consistency you want.

Note: I am not putting instructions for canning here just that you need to process for 30 minutes after canner comes to gentle boil.
Also, the amounts for seasoning are a starting point, season to your own taste. I absolutely am 100 percent happy with my outcome.
(I canned 2 quarts, 4 pints, and 9 half-pints with this recipe)

Mine too Linda. She is still rocking the kitchen at 87 years. I am trying and have been for a long long time to get her to write down her recipes.

Granny your sounds good!! I have never put celery or jalapeno peppers in mine I should give it a try.

OK. Now I'm in the mood for a big ol' plate of pasta! Do you garden, Granny? Will this batch of spaghetti sauce last you till next summer? I've often toyed with the thought of gardening, but knowing that I'm usually cooking for one always gives me pause. If I learned the art of canning, though . . .

I have a very small garden this year....the first in years...I live in apartments....I moved this year to an apartment that has a front and back yard that is just mine and I am allowed to plant in designated areas around my apartment.....hard to explain. I will be planting more next year and canning more.

Every year I buy a lug of Colorado Peaches (this year it was 2) off a truck that comes and sells here....I can peach salsa and freeze the rest. I canned 3 batches this year and my children got all but 2 little jars.

You can can in half-pints or pints.....great for just one, especially the half-pints.

Anyway, Inky if you are interested in canning, let me know, we can get you set up in no time, especially by next year. Although there are plenty of winter fruit, etc if you really got into it. I like the summer veggies myself.

I had a devil of a time trying to learn to cook for one. I finally gave up when I read an article about people who cooked in large quanities once a month and froze it in meal size servings.
I don't do that but now I just go on a cook just like I always did and have meal for that day and devide the rest and freeze it for later.
It is working pretty good, I especially love it when I'm hungry but don't want to cook.
