 Sour Cream Enchiladas

1 can cream of chicken soup
16 oz Sour Cream
8 oz taco sauce
1 1/2 lbs ground beef, ground sirloin, chicken breast shredded, etc
1 small can diced green chilies
1/4 c onion
2 pkg cheddar cheese
1 pkg flour tortilla..... I use whole wheat tortillas


preheat oven 425. Brown hamb, onion, and some green chilies. Drain. Add taco sauce to the browned meat or you can add a pkg of taco meat seasoning.
Mix soup , sour cream and the rest of green chilis in a pan . Warm on stove.

Spread thin layer of sauce on bottom of 9x13 lasagna pan. In a tortilla layer a spoon of hamb, sauce and cheese . roll and place in pan, continue.

Cover with remaining sauce and cheese and bake for 25 minutes.

HelloKitty....I've always made my enchiladas with a mixture of sour cream and cottage cheese. Next time I make them I'm going to try the cream of chicken soup instead of the cottage cheese. Also I always just dump a can of enchilada sauce over the top of them before I put them in the oven, but I've never really found a brand of sauce that I like. They all seem to have a bitter taste to me. I don't know why I never thought of using taco sauce before. Thanks for the new ideas.

When the recipe calls for covering with remaining sauce. it means to cover with the remaining sourcream/chicken soup sauce...

You know what I do? In a pinch, I used that canned chicken..
the white meat stuff. If I make chicken enchies, I use a white Mexican cheese instead of cheddar, but I'm sure yellow cheese as my daughter used to call it is very good too.

YUP, THAT'S YUMMY TOO NANCY

my sister makes the best homemade shredded beef enchiladas
She cooks a roast all day, then shreds, and makes a wonderful homemade enchilada sauce.
homemade refried beans and rice.
YUM!
I must call her for the recipe

this sound good. I have never made enchiladas but I love the idea of sour cream and the chicken soup together. Very creamy and comforting. I am going to give this one a try.

I've been looking for this recipe. We use to make this at my work with our leftover picked chicken and it was a favorite. I'll probably try it with ground beef though. Thanks for sharing this one.

This sounds so good, Kitty! I've made enchiladas with cream of chicken soup and sour cream, but my recipe makes more of a "white" enchilada! It doesn't have taco sauce, just green chilies. I'll have to try your version. I'll bet it's delicious!
