 Smart Coleslaw with Pears, Walnuts and Cranberries

PostSubject: Smart Coleslaw with Pears, Walnuts and Cranberries   May 25th 2009, 6:52 am

This recipe was in the paper last week and I tried it on the weekend - it went over well, so I'd definitely make it again.

Coleslaw with Pears, Walnuts and Cranberries

2 pounds (total) shredded red and green cabbage
I large coarsely grated carrot
½ red onion, grated
Combine these in large bowl and sprinkle with ¾ tsp salt – mix and set aside

In a small bowl, combine:
¼ cup cider vinegar
¼ cup reduced fat mayonnaise
¼ cup non-fat yogurt
1 to 2 tbsp maple syrup or light coloured honey
Whisk until smooth
Pour this dressing along with ½ cup dried or minced fresh cranberries into the cabbage mixture and mix well
Transfer to a container with a tight fitting lid and refrigerate until shortly before serving

Just before serving, cut 1 or 2 bosc pears into thin strips and gently mix into coleslaw
Top with up to 1 cup lightly toasted chopped walnuts
(serve with squeezable wedges of lemon - optional)

I am just seeing this now, how did I miss it? It looks great CJ!! Summer is coming (suppose to be anyway, if the weather starts to cooperate) I will keep this in mind for our next BBQ!

This sounds good to me, too. I love pears in almost anything! I wonder where the name "Smart Coleslaw" came from, though, or am I a dummy for not getting it?

Inky! You left without leaving a note! Missed you very much! I think 'smart' comes from the ingredients. Low fat, fresh ingredients.

Did I tell you I signed up at SparkPeople awhile back? I've lost 25 pounds so far and walked around 90 miles, but I didn't realize how long it takes to actually do the exercise and then track my nutrition and fitness online.

I'm gonna have to learn to juggle, though! It's almost time for Big Brother.

(and yes, I think the "smart" in the title relates to the low fat, heart healthy slant to the recipe.)

Thanks Lori and Mary Lou (and everyone else)! I've been on the road for a few days, but I'm looking forward to heading home tomorrow, after one more meeting.

If anyone else is ever on the road and has access to a microwave -- or is at home or work and just wants something quick and easy -- try Healthy Choice's new Fresh Mixers. I made their Southwest Chicken and Rice, today, and it was pretty good. Five minutes in the microwave, stir in the sauce, 30 more seconds of microwave, and you're done. I just wish I'd have had something to make a salad with, too. It's tough eating out all the time when you're watching your calories and sodium!!

Oh, and since these Fresh Mixers don't require refrigeration, they'd be great to have on hand for any time you're in a pinch -- at work or at home.
