Shrimp Ranchero

1 pound of shrimp, cleaned and deveined
1 tablespoon canola oil
2 tablespoons of tequila
1/2 cup of Pico de Gallo (I like Newman's)

1. In a large saute pan, briefly saute shrimp in canola oil over medium heat. Add tequila and cook until evaporated, about 30 seconds. Add pico de Gallo and finish cooking until shrimp is pink. Do not overcook.

Serve with rice or pasta.
