 Orange-Ginger Sweet Potato Casserole

I'm getting prepped for Thanksgiving this weekend and I'm going to make the sweet potatoes this way this year.

Orange-Ginger Sweet Potato Casserole (Serves Eight)

Ingredients:

  1. 4 sweet potatoes
  2. 1 tbsp orange zest
  3. 2 tsp finely minced fresh ginger root
  4. 2 egg yolks
  5. S & P to taste
  6. 1/4 cup orange juice (one orange, juiced)
  7. 1/2 cup 2 % milk (I think I'll use skim milk)
  8. 1/3 cup chopped pecans

Directions:

  1. Preheat oven to 450 degrees F. (oven rack in middle position)
  2. Line a rimmed baking sheet with foil. Pierce each sweet potato several times with a fork, and place on the prepared baking sheet.
  3. Roast the sweet potatoes in preheated oven until easily pierced with a fork, 1 to 1 1/2 hours.
  4. Remove sweet potatoes from the oven, and cool about 15 minutes. (I think I'll roast them the day ahead)
  5. Lightly grease a 1 1/2 quart baking dish, and set aside. Set oven temperature at 375 degrees F.
  6. When sweet potatoes are cool enough to handle, cut in half, and scoop flesh into the bowl of a food processor. Discard potato skins. (I add the skins to the food processor but the recipe says to discard them.)
  7. Add the orange zest, ginger and egg yolks. Process to make a smooth mixture.
    Season to taste with salt and pepper. Pour in the orange juice and milk. If desired, add more orange juice to taste. Spoon sweet potato mixture into prepared baking dish. Sprinkle top with pecans.
  8. Bake in preheated oven until heated through and pecans are toasted, about 30 minutes.

Oh my gosh my heart just sank and I thought "it's Thanksgiving already? Where have I been?" Of course then I realized you are Canadian. lol! The recipe sounds delicious.

Yum! This recipe sounds so good, Jessie! When do you all celebrate Thanksgiving? Sometime in October? In case you couldn't tell, Thanksgiving is my favorite holiday -- lots of good eatin' and family memories, without all the stress that comes with Christmas celebrations. Plus, I just like remembering all the reasons I have to be thankful.

Thanksgiving is the second Monday in October.
I don't have to do the turkey this time so I'm getting my vegetables and salads planned.
