| Gordon Ramsay was on TV tonight and while looking at his recipes on the Ch4 website I found this. I'd never thought of freezing meat in the stock before???? (BTW I'd never frozen stock until Nigella told me I could ) The three recipes quoted aren't bad but I'd be interested to know from the AABB Chefs on here whether you think the basic broth could be used for pie/pudding fillings or pasta sauces, for example? _________________ "There is no snooze button on a cat who wants breakfast - Unknown"

| You can use the broth in any recipe that calls for broth or you can sub broth for water in many dishes. Whenever I find cheap chickens, I boil them up, debone, and freeze broth and meat. _________________ We did not change as we grew older; we just became more clearly ourselves. | Whenever I cook a chicken or turkey, I throw the bones in a plastic bag in the freezer. Every month or so I use them to make stock and then I divide it into 2 or 4 cup amounts and freeze the stock. I use the stock for everything from stews to soups to sauces. _________________ In combat or competition, where the stress levels are highest, you do not rise to the occasion… you sink to the level of your training.

| I always try to keep some chicken stock in the freezer. It comes in so handy when you want to throw dinner together, and it's absolutely fine to leave chicken in the broth.
Have you ever heard of marinating chicken in the freezer? That works, too. Just throw your favorite chicken parts in a freezer bag, along with your favorite marinade and freeze till you're ready to use it. It marinates as it freezes and again as it thaws, and it makes dinner easier, too. Sometimes, I'll buy a bunch of chicken when it's on sale, fix up different marinades, throw multiple bags in the freezer, and voila! You always have something on hand for unexpected guests . . . or when you're in a hurry._________________ MODERATOR Counting down the days till our next trip . . . |
