I don't remember where or when I found this recipe, but I finally got around to trying it today and . . . Yum! Yum! It's a keeper. I thought it might end up being a pile of mush, given how long it's baked, but nope! It was great. It tasted a whole lot like a casserole my grandma used to make, but she also added layers of thinly sliced potatoes, onions, and rice to the things listed here. I loved that stuff, but this is a good, lower calorie/carb version. I know I'll be making it often. Enjoy!

Mom's Crazy Cabbage

1 1/2 lb. ground chuck
1 small onion, chopped
1 small cabbage, coarsely chopped, about 1 lb. 13 oz. before trimming*
14.5 oz. can diced tomatoes, undrained
3 strips bacon
Salt and pepper, to taste

Brown the ground chuck and the onion; drain off the grease and season with salt and pepper. Put half of the cabbage in the bottom of a greased 9x13" baking dish. Season with salt and pepper. Top with the meat, then the remaining cabbage; season again. Pour or spoon the tomatoes evenly over the cabbage and lay the strips of bacon over the top. Cover with foil and bake at 325º for 3 hours. Discard the bacon before serving. (My Note: I baked at 300, since my oven is a little hot, and it may have been in for a bit over 3 hours. Also, I did not remove the bacon. What???? Waste three perfectly good slices of bacon?? Are they kidding? Laughing )

Makes 6 servings
Can be frozen

Per Serving: 259 Calories; 15g Fat; 22g Protein; 10g Carbohydrate; 3.5g Dietary Fiber; 6.5g Net Carbs

This friggin sounds GOOD and comfort food to boot! NEVER waste the bacon man!

Ohhhhhhhhh that sounds yummy....and yes, they are nuts; I would never throw out the bacon, lol!
