| Another favorite from the "Doo" kitchen . . .
Lemon Sponge Pie
2 egg yolks, beaten 1 c. sugar 4 T. flour 1 c. milk grated lemon rind and juice of 1 lemon (or 4 T. lemon juice) 2 T. butter 2 egg whites, beaten (with salt, below) until stiff 1/2 t. salt 1 pie crust, 10-inch, unbaked Mix flour and sugar together; add beaten egg yolks, lemon juice and rind, and milk. Fold in egg whites, which have been beaten, with 1/2 t. salt, until stiff. Pour into the pie shell. Bake at 425 degrees for 10 minutes and then reduce oven temperature to 325 degrees for 25 minutes. Bake until golden brown and until knife inserted in center. NOTE: This separates as it bakes and leaves a delicious lemon custard on the bottom, with a sponge cake-like topping. | I made this pie and love it!  I couldn't find a 10 inch pie crust so I used a 9 inch deep dish. Thanks for the recipe inky! This is delicious and very easy to make. |
