| I've been thinking. Oh no! She's at it, again. I love reading about what others are cooking for dinner, and I know others like doing that, too. I also know, though, that we don't cook every day, so I thought instead of always starting a new thread, how about if we try just one?
I'm imagining something like a journal, where we can post what we cooked the night before . . . good or not so good, plain or fancy, quick and easy or more complicated, full out "from scratch" or with the help of convenience foods. Nothing's off-limits.
What do you all think? And, what did you cook for dinner last night?
I'll go first. I had the baked tilapia that I posted here yesterday and a simple salad of greens, cucumbers, red onions, and few cherry tomatoes. I like that recipe because it comes together so quickly. I had run out of the spicy seasoning mix, so had to make a new batch, but even so, dinner was on the table less than 30 minutes after I got home from work. And, I love the butter sauce that forms in the pan.
Oh, and instead of some other beverage, I had water. Boring, I know, but I'm trying to increase my water intake and stay away from soda or pop. Just curious. What do you call it, where you live? Soda or pop . . . or something else? For me, it would have been Diet Coke with Splenda._________________ MODERATOR Counting down the days till our next trip . . . |

| Last night was Chicken cordon Blue......(sp) Mock mashed potatoes(whipped cauliflower, with garlic and chives), and a nice salad(romaine hearts, garden cucumbers, bacon bits, cherry tomatoes, and fresh parmesean cheese) I had a decaf coffee with french vanilla for dessert, with a little bit of coolwhip free.!! Tonight........I have n o idea, i better figure it out. I will be gone most of the day. I am taking my mother on a well deserved shopping spree and a day at the salon and spa. _________________ Super Mod

| Last night I made a shrimp and pasta dish with a lemon garlic butter sauce. It was to die for. I had a recipe but it never tasted how I thought it should so I have been experimenting and finally got it. It may not be for everyone as I love garlic and I love, love lemons (I buy them by the bag). Tonight I am having a large salad with chicken strips on top and many, many veggies that I purchased from the farmer's market. Yum, yum. Soda/pop is called pop here in the plains but I call it soda. _________________ We did not change as we grew older; we just became more clearly ourselves. | Yesterday we had roast beef with roasted potatoes and corn. Tonight I think it's going to be fried boneless chicken breast with french fries (good healthy meal!!). Wish I liked fish cuz these fish recipes sound yummy. |

| Hubby and kids had sloppy joes last night for dinner. I worked so I ate nothing. Yeah I know really healthy huh? And we call it pop here. |

Hey, Granny! Would you care to post your tweak of the shrimp and pasta dish on the board? I don't want to ask you to give away any secrets, but hearing that you "got it" piques my interest. I love those tried and true recipes. |
Inky, I will sit down and see if I can write down a recipe that makes sense. It is really simple but I did so much by taste....well I will see what I can do. | Hubby made homemade pizza tonight.....delish! Although it was so frickin hot here and with the oven on the poor ac had to work overtime. Tomorrows dinner, I'm not sure yet. Maybe Enchiladas? |

| Well, I did a little better, last night. I had a sirloin steak with Eisenhower sauce, mushrooms, and a salad on the side. I thought about roasting some cauliflower, but didn't feel like turning the oven on. I can't wait for it to cool down around here.
Here's the Eisenhower sauce, along with its original note. I do omit the salt the recipe calls for and just use salt substitute right on the steak. That's just me, though. I'm trying to cut down on my salt intake. Eisenhower Steak SauceMy mom used to make this Eisenhower steak sauce when we were kids. My dad was a butcher, so we had steak often enough that we kids would complain with, "steak AGAIN?" Can you believe that? 1/4 c. butter 1 T. Worcestershire sauce 1 t. salt 1 t. garlic powder Melt butter with Worcestershire sauce, salt and garlic, stirring. Baste steak before grilling or broiling, and again during grilling or broiling. Serve any left over in small pitcher with steak. (This is what my mom did, but she also added mushrooms to it.) _________________ MODERATOR Counting down the days till our next trip . . . |

| I forgot this was a running thread! LOL last night was breakfast! scrambled eggs, with ham, red and green peppers, low fat cheese, onion, mushrooms....... I made hubby bisquits..... It was great. The sauce sounds wonderful..I always try and think of something to go with the steak besides A1.... especially a cheap cut. Thanks inky. Granny, the Lemon, Garlic Shrimp sounds Fantastic......... | Today was the first day of school here. My daughter had a bad case of nerves yesterday, she's starting her freshman year of high school today. So last night I made one of her favorite meals. We had garlic teriyaki chicken on the grill, stuffing, and broccoli and cheese sauce. Inkydinkydoo, I can't wait to try your Eisenhower Sauce, it sounds great. One of the stores here in town just had their 4H beef sale, so I stocked up on a lot of steaks. |

| Wow Colleen....where are you? Our schools don't start until after Labor Day here. I hope that yor daughter has a great first day!! Soetimes don't you wish you could just do the hard things FOR them? LOL......my daughter starts kindergarten on Sept 2nd......she is so shy....but I think I am more nervous than she is! On a thread note...I have to say I am in awe of all of you....I have 5-6 basic recipes that I remake over and over....my poor kids! I do have to say that I broke out of my comfort zone the other night and made something called "Kid Kabobs". It was beef stew meat and cherry tomatoes that had marinated in equal parts soy sauce and honey. (It called for a dash of salt to taste, but I skipped it.) After they marinade (my 5 year old helped me with the sauce!), you put them on skewers, alternating meat and tomatoes and cook them under the broiler for 7-10 minutes, turning once. I served them with buttered egg noodles and corn. LOL...Callie did a full year of 4 year old kindergarten, but this year is the BIG school......k-Grade 5 all in the same school....I have to say that I am nervousing!!  LOL! | Freshman year of high school, Colleen, and first day of kindergarten, Rayney! New chapters in the book of life for both of you! Repeat after me. "Everything's going to be OK. Everything's going to be OK." My grandson starts middle school (in a new building) this year. Yikes!! How did that happen?
Our kids to back to school this Thursday, which is early for them. They've always gone back around Labor Day, in the past. I don't know why they've bumped it up this year. I thought it might be to allow for "snow days" this winter, but they really weren't off much this past winter . . . so, who knows. Maybe the TPTB want to get out earlier in the spring, so they can go to Disney World.
Dinner last night was super simple, for me. I had some steak and mushrooms left over, so that's what I had. This happens a lot when you try to cook for one, and your eyes are bigger than your stomach (as my grandma used to say). | I was going to make a meatloaf last night, with salad and brocolli and cheese, but DD came home around 5 with her volleyball team mates starving and wanted "mom" to cook for them before they had to be back to practice at 6..... They met me at the store real quick, i made them put the soda and candy bars down. (soda is not good for a person who is conditioning) They wanted Pizza.... DD cant have Pizza...... no white flour for her skin, so I told them I would make "mock pizza" I took whole wheat rotini, pepperonis, onions, peppers, pizza sauce , and mozz cheese ..... mixed it all together...... made em a great salad, and YUM! It tasted like pizza....... Hubby came home and he ate a steak, potato, and salad by himself, I was full. tonight is the meatloaf, I am president of the "spirit dawgs" and we need to paint the buses tonight, then we have an open house at the school, and right after that a parents/coaches meeting.... I need to get some stuff made for when these girls come over again at 8:30 am, 4:30 pm, and 6:30 _________________ Super Mod

Back in the day . . . you know, the guilt-free days, when I could still enjoy Pizza Hut . . . one of my favorite things to order was their Cavatini Supreme. It was much like you described (pepperoni, sausage, peppers, mushrooms, mozzarella cheese, and pizza sauce), but baked in the oven with lots of melty cheese on top. Man, I loved that stuff!!
