5 MINUTE CHOCOLATE MUG CAKE
1 LG. Coffee Mug
4 tablespoons flour (that's plain flour, not self-rising)

Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed!

EAT! (this can serve 2 if you want to share!)

When I make this at home I will add Kahlua instead of the vanilla.

And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!


This looks so good, JLEspo!! I have a low carb version that's similar, and it's amazing how good something so simple can be. Thanks for sharing! I'm going to send this to my son. He'll love it!

Does anyone have any ideas what i can do with leftover steak? i have 3 huge ribeyes left but i have no idea what to do with them. lol. i guess maybe make gravy for them? that sounds boring though, any ideas?

How about fixing beef and noodles or a stir fry or a stroganoff?

I like Granny's ideas. I love beef and noodles! Or you could slice your steaks thin, on the diagonal, grill some peppers and onions, and make fajitas. That sounds good to me, right now, too.

I'm having leftover "chicken stuff" from last night, for dinner. Not very creative, but it sure is good.

I had the best soup tonight.....Black Bean and Tomatillo Soup with Lime and Cilantro. New recipe and a keeper. I am now eating low carb so "experimenting" will be my name for a while.

thanks for the ideas. i wish i could buy frozen noodles here. i love those things, and they don't sell them in the south anywhere that i've found big cry i guess i'll just get some egg noodles that does sound kinda good. i'll make that tomorrow Smile

Now, Stoofers, Naughty, naughty Laughing Laughing it's easy to make your own noodles. I make homemade chicken and noodles -- or as the Pennsylvania Dutch call it, Chicken Potpie -- quite often. There's nothing like homemade! It does take a little extra work, but it's not hard.

Homemade Noodles

6 c. flour
3 t. salt
1 1/2 t. pepper
9 T. butter
6 eggs
3/8 c. milk

Put dry ingredients in a bowl; cut butter into it; add eggs and milk. Mix well with hands. Roll out dough onto a floured surface until approx. 1/8 inch thick. Use a sharp knife to slice the dough into the shape desired. I cut small rectangles (about 1 inch by 3 inches) for chicken potpie. For noodles, you'd just cut in long, thin strips.

Good for you on the low carb, Granny! I'll tell ya. It's made all the difference in the way I feel. I'd love to see your black bean soup recipe, if you don't mind sharing. I'm always looking for new good low carb recipes.

Tonight I am making something really simple. Nachos with melted cheese with ground beef, onions and red peppers. We ate so many big meals over the Thanksgiving weekend I need something simple and light.

I hear ya Sydney! I overindulged this weekend (go figure) so I just made a mango/avocado/roasted pepper salad for our dinner tonight.
I brought the turkey carcass home from our family dinner so I guess I'll make stock or soup tomorrow. (or both)

Yummy I love Turkey soup. I am terrible at making the broth though, mine never turns out as well as my mothers or grandmothers. I guess I have to keep trying.

Tonight I am trying a new and very simple reciepe and thought I would share it. I got it from Kraft.

One-Pan Chicken and Potato Bake
(From Kraftcanada.com)


Prep time - 5 minutes
Total time - 1hr 5 minutes.
Makes - 4

4 Bone in Chicken pieces (1-1.5 lb.)
4 large potatoes, cut into wedges
1/4 cup Kraft Zesty Italian Dressing
1/4 cup Kraft 100% Parmesan grated cheese. (I used my own fresh grated)

Preheat oven to 400 F. Place chicken and potatoes in 13x9 inch baking dish.
Pour dressing over chicken and potatoes, sprinkle with cheese.

Bake 1 hour or until chicken is cooked through (180 F).

I added more cheese than it called for and more dressing to make sure everything was coated. It smells delicious while baking and was so quick and easy to put together after work.

I settled for chicken broth, tonight. I'm not congested, anymore, but I've been nauseous, off and on, ever since Saturday. The broth kinda "settled me down."

It was pretty good my husband really liked it. It was a nice change. I should of cut the potatoes smaller as they took longer to cook than the chicken so I had to leave it in longer. Trial and error I guess. It sure was easy and only a one pan clean up as I steamed some veggies in the microwave.

I make this one pan chix and potatoes, I add carrots to it and Boom Dunn.

Sometimes I also add a can of tomaotes.

Gosh that chicken and potatoes sounds delicious. I just made chicken breasts and mashed potatoes and stuck them in the fridge for the kids' dinner. I wish I would have checked this thread out first. Your chicken sounds better than mine! Mad

I had to make a quick trip to Columbus on business, yesterday, so dinner last night was some thrown together "chicken salad" on lettuce. It wasn't very exciting -- nothing like icecoffee's Beyond the Grave Chicken Salad -- but it filled the holes Laughing and that's what mattered last night.

I made an old favorite last night, with enough left over for tonight's dinner. I don't know why I don't make this more often, because it's true "comfort food" and it goes together so quickly. It ony takes about 15 minutes, from start to finish.

Last night, I added some scallops, along with the cream, but it's just as good on its own. Enjoy!

Linguine with a Mushroom Sauce
(From In the Kitchen with Bob, an old cookbook by Bob Bowersox, QVC host)

8 oz. linguine (I use Dreamfield's low carb linguine)
2 T. olive oil
3 to 4 oz. mushrooms, thinly sliced
1 small onion, chopped
2 garlic cloves, finely chopped
1 c. heavy whipping cream
1/2 t. salt
1/4 t. coarsely ground pepper

Cook the linguine until al dente, drain, and keep warm in a heated bowl. While pasta is cooking, heat the oil in a large skillet over medium-high heat. Add the mushrooms, onion, and garlic and cook until onion is tender, about 1 or 2 minutes. Add the cream and salt and heat to boiling, stirring often. Reduce heat and simmer uncovered for 5 minutes or until slightly thickened. Pour the sauce over the drained linguine and toss until well coated. Serve with the pepper on the side. NOTE: This is “comfort food” and is also wonderful with some shrimp and/or scallops thrown in.

I took out my hockey frustrations on a poor turkey last night. (The Senators are sucking right now, damn it!)
I got a smaller fresh bird and deboned and stuffed it. It was a bit of an experiment as I'd never deboned a turkey before. (I want to do it for Christmas dinner)
Getting started was tricky but then things went fine. You leave the legs and wings intact so it looks pretty funny before you stuff it. I haven't seen that much sagging flesh outside of a gym locker room! Ha.
When you first stuff it, it looks like a basketball with legs and wings but then you push it into "turkey" shape and tie it that way. (You need more stuffing than usual) My DH was laughing at me whenever he left the football games and came into the kitchen to check on my progress (OK, to get a beer) but he was impressed later when we could just cut right through it and get pretty slices of turkey and stuffing.
I'm thinking that a bigger bird would be even easier as you'd have more room to get your hands inside.
