| Does anyone have any ideas what i can do with leftover steak? i have 3 huge ribeyes left but i have no idea what to do with them. lol. i guess maybe make gravy for them? that sounds boring though, any ideas? |

| I had the best soup tonight.....Black Bean and Tomatillo Soup with Lime and Cilantro. New recipe and a keeper. | thanks for the ideas. i wish i could buy frozen noodles here. i love those things, and they don't sell them in the south anywhere that i've found  i guess i'll just get some egg noodles that does sound kinda good. i'll make that tomorrow  |

| Tonight I am making something really simple. Nachos with melted cheese with ground beef, onions and red peppers. We ate so many big meals over the Thanksgiving weekend I need something simple and light. _________________ Moderator

| I hear ya Sydney! I overindulged this weekend (go figure) so I just made a mango/avocado/roasted pepper salad for our dinner tonight. I brought the turkey carcass home from our family dinner so I guess I'll make stock or soup tomorrow. (or both) _________________ In combat or competition, where the stress levels are highest, you do not rise to the occasion… you sink to the level of your training.

Yummy I love Turkey soup. I am terrible at making the broth though, mine never turns out as well as my mothers or grandmothers. I guess I have to keep trying. _________________ Moderator

| Tonight I am trying a new and very simple reciepe and thought I would share it. I got it from Kraft. One-Pan Chicken and Potato Bake (From Kraftcanada.com) Prep time - 5 minutes Total time - 1hr 5 minutes. Makes - 4 4 Bone in Chicken pieces (1-1.5 lb.) 4 large potatoes, cut into wedges 1/4 cup Kraft Zesty Italian Dressing 1/4 cup Kraft 100% Parmesan grated cheese. (I used my own fresh grated) Preheat oven to 400 F. Place chicken and potatoes in 13x9 inch baking dish. Pour dressing over chicken and potatoes, sprinkle with cheese. Bake 1 hour or until chicken is cooked through (180 F). I added more cheese than it called for and more dressing to make sure everything was coated. It smells delicious while baking and was so quick and easy to put together after work. _________________ Moderator

| It was pretty good my husband really liked it. It was a nice change. I should of cut the potatoes smaller as they took longer to cook than the chicken so I had to leave it in longer. Trial and error I guess. It sure was easy and only a one pan clean up as I steamed some veggies in the microwave. _________________ Moderator

I make this one pan chix and potatoes, I add carrots to it and Boom Dunn. Sometimes I also add a can of tomaotes. _________________ MODERATOR

| I made an old favorite last night, with enough left over for tonight's dinner. I don't know why I don't make this more often, because it's true "comfort food" and it goes together so quickly. It ony takes about 15 minutes, from start to finish.
Last night, I added some scallops, along with the cream, but it's just as good on its own. Enjoy!
Linguine with a Mushroom Sauce (From In the Kitchen with Bob, an old cookbook by Bob Bowersox, QVC host)
8 oz. linguine (I use Dreamfield's low carb linguine) 2 T. olive oil 3 to 4 oz. mushrooms, thinly sliced 1 small onion, chopped 2 garlic cloves, finely chopped 1 c. heavy whipping cream 1/2 t. salt 1/4 t. coarsely ground pepper
Cook the linguine until al dente, drain, and keep warm in a heated bowl. While pasta is cooking, heat the oil in a large skillet over medium-high heat. Add the mushrooms, onion, and garlic and cook until onion is tender, about 1 or 2 minutes. Add the cream and salt and heat to boiling, stirring often. Reduce heat and simmer uncovered for 5 minutes or until slightly thickened. Pour the sauce over the drained linguine and toss until well coated. Serve with the pepper on the side. NOTE: This is “comfort food” and is also wonderful with some shrimp and/or scallops thrown in._________________ MODERATOR Counting down the days till our next trip . . . |

| I took out my hockey frustrations on a poor turkey last night. (The Senators are sucking right now, damn it!) I got a smaller fresh bird and deboned and stuffed it. It was a bit of an experiment as I'd never deboned a turkey before. (I want to do it for Christmas dinner) Getting started was tricky but then things went fine. You leave the legs and wings intact so it looks pretty funny before you stuff it. I haven't seen that much sagging flesh outside of a gym locker room! Ha. When you first stuff it, it looks like a basketball with legs and wings but then you push it into "turkey" shape and tie it that way. (You need more stuffing than usual) My DH was laughing at me whenever he left the football games and came into the kitchen to check on my progress (OK, to get a beer) but he was impressed later when we could just cut right through it and get pretty slices of turkey and stuffing. I'm thinking that a bigger bird would be even easier as you'd have more room to get your hands inside. _________________ In combat or competition, where the stress levels are highest, you do not rise to the occasion… you sink to the level of your training.
