| the peach salsa sounds good Granny. I have a wonderful peach tree out back that is doing GREAT this year. I canned 5 qts of pie filling. and now am just going to freeze the pie filling. That's about all i do with it.It's my husbands favorite, peach pie, and I dont care for it and wont be tempted to eat it! _________________ Super Mod

it's kind of a sad one. we pruned it last year and it looks 100% better and the peaches were bigger this year.

| i am making ground pork steaks, broccoli and cheese, with a tossed salad. Although the salad will be blah, because i ran out of romaine lettuce. Oh well. my gall bladder is acting up, so i wont be eating much. _________________ Super Mod

| A friend and former colleague is teaching a nutrition unit to her grade eight class and I'm helping with the cooking part. We've been talking a lot about "Clean Eating" and I pulled this recipe from the Clean Eating Magazine website and made it with the boys. (We quadrupled the recipe) It was a winner!

Turkey Tenders with Cranberry Yogurt Dipping Sauce
Ingredients: 2 whole wheat or whole grain pita breads 1 tsp kosher or sea salt 1 tbsp chopped fresh sage 1 lb turkey tenderloins 1 clove garlic, split 2 tsp olive oil
Instructions: 1. Preheat oven to 375°F. Line a rimmed baking sheet with foil. Place pita breads on the foil and bake until dry and crispy, about 7 to 10 minutes. 2. When the pita breads are cool enough to handle, break them up and grind them into coarse crumbs with a food processor. Stir in salt and fresh sage. Place the seasoned crumbs onto a plate. 3. Dry off turkey tenderloins with a paper towel. Rub split garlic clove all over the meat. Cut the tenderloins into 1 1/2-inch chunks and place in a bowl. Add olive oil to bowl and, using your hands, mix until the meat is evenly covered with the oil. 4. Roll each piece of turkey in the seasoned bread crumbs until well coated and place on the prepared baking sheet. Bake for 15 to 20 minutes until the turkey is cooked through and no pink remains. Serve warm with Cranberry Yogurt Dipping Sauce.
Cranberry Yogurt Dipping Sauce Ingredients: 1 cup fat free plain yogurt 1/2 cup dried cranberries
Instructions: Combine yogurt and dried cranberries in a food processor and blend until cranberries are finely chopped. | I don't subscribe inky but I pick it up from time to time. I've been trying to eat this way for years and I love it. It's pretty simple really - just choose foods to cook/eat that are as close to their natural state as possible - no processed foods. (My man has a junk cupboard but I just pretend I don't see it. | Inky I am sorry you are not feeling well. I hope that you feel better soon, chicken broth is the best when your not felling well hopefully it helps pull you through this. I am not sure what we are having tonight. I am feeling very tired and lazy today I guess I should get myself motivated but I feel kinda bla. Last night we had a great meal, we went to The Keg for dinner and I had an amazing Tenderloin steak with blue cheese sauce and garlic mashed potatoes, that will be tough to beat today LOL. _________________ Moderator

| Get well soon inky! I made a caramelized onion pizza last night and served it with a green salad. (I know it doesn't sound very good but it's tasty if you like onions) Caramelized Onions2 tbsp olive oil 2 cups sliced or chopped Spanish onions dash of brown sugar ( I just used a pinch - it seems to help with the carmelization process) Heat oil in large skillet on medium-low add onions and dash of sugar Cook slowly for 20 to 30 minutes, stirring often, until onions are soft and golden brown (You can add a dash of thyme, rosemary and basil if you like) Caramelized Onion Pizza2 cups (approximately) of caramelized onions 1 homemade or purchased pizza crust (12 inches) 1/3 to 1/2 cup grated or slivered parmesan cheese (I prefer to sliver what I need from a block of good quality parmesan using a potato peeler) Spread caramelized onions on pizza crust Spread parmesan over onions Bake at 425 F for 12 to 15 minutes or until golden You can add additional things to this pizza, of course - sliced grilled chicken, chopped roasted tomatoes, crumbled feta, mozzarella, pine nuts, sliced olives, sliced red bell pepper, etc. _________________ In combat or competition, where the stress levels are highest, you do not rise to the occasion… you sink to the level of your training.

| Ok last night for dinner we had Chili and homemade bread---YUM best part of fall is all the comfort foods....Tonight we are having Roast, pototoes, carrots and homemade bread again....the loaf I made yesterday was GONE! |

| Didn't cook this last night - we made these in work yesterday - this works and its good !5 MINUTE CHOCOLATE MUG CAKE 1 LG. Coffee Mug 4 tablespoons flour (that's plain flour, not self-rising) 4 tablespoons sugar 2 tablespoons baking cocoa 1 egg 3 tablespoons milk 3 tablespoons oil 3 tablespoons chocolate chips (optional) Small splash of vanilla Add dry ingredients to mug, and mix well . Add the egg and mix thoroughly. Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired. EAT! (this can serve 2 if you want to share!) When I make this at home I will add Kahlua instead of the vanilla. And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night! |

| Well, believe it or not, I am finally on the mend. Woo hoo! I just finished up a series of antibiotics and steroids (I hate! hate! hate, steroids!!!), and I'm beginning to feel like myself again. It's a great feeling!! Seems like it's been forever! I really appreciate you all jumping in and trying to keep things going, here.
I've been kinda nauseous all weekend, but since it finally feels like it's "movin' on," I threw an old favorite in the oven. It's not really a recipe, per se. It's just boneless chicken breasts, in a 9 x 13" pan, topped with sundried tomato Alfredo sauce and mozzarella cheese. It's way yummier than it sounds. And, this time I threw on some leftover bacon, a few sliced onions, and fresh mushrooms, too. It's in the oven, covered with foil, right now. I'll add the mozzarella in about half an hour. This is great with steamed broccoli on the side, but you could also serve it over pasta, if you wanted.
