I remember the Cavatini! When I lived in North Carolina in the 70's the local Pizza Hut had specials like All you can Eat Tuesdays and they served Cavatini along with the Pizza. It was the place to be when I was 15. I remember two twin brothers that played football. The brothers were very competitive and they would challenge each other on Tuesday nights. I sat and watched both brothers eat two WHOLE pizza's EACH!!!!!!!!!! afraid

Wow Kimmie - you're a busy gal! Awesome - and the "mock pizza" sounds great.
I've decided we're having a fish week this week. (Not my DH's favourite but oh well. Lol)
Last night I made grilled tuna steaks. Tonight I'm making baked walleye with lemon and garlic.

Grilled Tuna
2 (6 ounce) tuna steaks, 1 inch thick
3 tablespoons extra virgin olive oil
salt and ground black pepper to taste
1 lime, juiced
Place tuna steaks and olive oil in a large resealable plastic bag. Seal, and refrigerate for 1 hour.
Preheat the grill - medium heat.
Lightly oil grill grate. Season tuna with salt and pepper, and cook on the preheated grill approximately 6 minutes, turning once. Transfer to a serving platter, and drizzle with freshly squeezed lime juice. Serve immediately.

Oh Kim! They were hot, muscular, good looking and straight A students. My older sister dated one for several months but he was too much of a player so she dumped him. demon banana

I have never had tuna steak.

I normally eat my tuna, with light mayo, onion, pickles, and celery(either on a bed of lettuce, with trisquit crackers, or on rye bread as a melt)

I have been wanting to try it.

walleye is my favorite, i have some fresh, frozen in my deep freeze!

That tuna steak sounds wonderful, Jessie! I remember one time, when I was a kid. My dad went tuna fishing and came home with this big can, into which they'd stacked his tuna steaks. He was so energized and excited. Evidently, tuna really puts up a fight when you try to reel them in, 'cause he talked about how hard and how long he fought to land his "catch." Either that, or it was a "fish story." It's funny, the things you remember . . .

I've really been letting this thread down the past day or two. Things have just been hellacious at work! Fall semester begins next Tuesday (I work for a University), and it's like everyone just realized that this Monday. Helloooo! Where have you all been????

Anyway, by the time I've gotten home from work, I've been too tired to even think about doing something complicated for dinner. The night before last, I took a page out of Kimmie's book and made breakfast for dinner. Then, last night, I finished off the steak with Eisenhower sauce and mushrooms. You just gotta love leftovers, when life gets out of hand.

I'm hoping today will be better than yesterday, work-wise. I have some chicken in the fridge that I need to do something with tonight. I'm thinking chicken cordon bleu. Yes, I know. Kimmie did that, too, recently, but I'm a copycat. What can I say?

lol, inky. You can copy me anytime, although I may not be the best choice.

Tuesday i made my low carb meatloaf.
ITs lean ground beef(or ground turke)
1 large egg
1 cup oatmeal
1/2 cup shredded zuccini
and 1/2 cup diced onion.
salt and pepper to taste

in a sauce pan you bring to boil
1 small can tomatoe paste
1/2 cup dry red wine
1/2 cup water.
dried basil.

mix the meatloaf ingredients together, pour 1/2 cup of the tomato sauce over and mix well.
Bake 350 for 35 minutes. removed from oven, pour remaining sauce over the meatloaf and then bake another 15 minutes.

I made some creamy scalloped potatos to go with it(for the hubby and DD of course) and a salad.

I ate it as I was running out the door to my meeting at the school.

Last night was pasta primavera.

whole wheat pasta.
1 cup frozen veggies.
1 lb lean ground beef
6 oz 2% velvetta.
salt , pepper, and garlic powder to taste.

it was really good, we made bowls of it and ate it in the car on the way to mid week bible class.

I have been so bad these last 3 weeks since I have been off work. We have been eating out just about every night. Last night was pizza and wings the night before chicken and ribs. The whole week we were in Florida we ate out every night Embarassed With school starting and our regular routine quickly catching up to me I need to get myself and my kitchen organized for regular meal making. I think tonight I have to make an extra effort and put a home cooked healthy meal on the table. My husband said two days ago how come you don't cook for me anymore? I felt bad, but we have been so busy running here and there by the time I am getting home its to late to start making a big meal. Well tonight is the night that I am going to give myself a kick in the bottom! I think I will make a Rotisserie Chicken on the BBQ, roasted potatoes and corn on the cob with a side green salad.

Tonight I'm goin' quick and easy with a watermelon salad and salmon clubhouse sandwiches.

Watermelon Salad
Combine equal amounts of cubed watermelon and cubed English cucumber.
Add crumbled feta cheese. (Whatever amount seems right)
Drizzle with balsamic vinegar.
Serve as soon as you make it.

Salmon Clubhouse Sandwiches
- grilled salmon filets
- crisply cooked bacon
- sliced avocado
- dollop or two of dilled mayo (or lemon aioli if it's for company - egg yolks, lemon juice and zest, crushed garlic and olive oil emulsion)
- the original recipe called for making the sandwiches on grilled focaccia bread but I toast triangle shaped whole grain buns that I get at Costco instead

The Watermelon salad sounds yummy! I just bought one maybe if my girls don't eat it all I will try that.

Okay so I went grocery shopping and changed my menu for tonight. Instead of Chicken I bought a Prime Rib Roast some mini potatoes and green beans. I think I will still do the roast on the BBQ!

I finally got around to making the chicken cordon bleu last night, and it hit the spot, probably because it was different from what I have been doing. I had three chicken breasts, though, so that means I have two meals left over. See what I mean about cooking for one? Lotsa leftovers. Laughing Ah well, that's just two nights I won't have to cook.

Your menu sounds interesting, Jessie. I know they serve a watermelon salad at Boma, the African-inspired buffet restaurant at Disney's Animal Kingdom Lodge, but I've never eaten there. I don't imagine they put feta on theirs, though. I do love feta cheese.

How did your dinner turn out, Sydney? Prime rib on the BBQ sounds yummy! You mentioned being off. Do you get to take the entire summer off or are you still on vacation? Lucky you, if you get the whole summer. Are there any openings where you work???? Laughing

Hi Inky the Prime Rib turned out really well. I also did some baby potatoes that were so sweet and yummy!! I don't have the whole summer off I took 3 weeks in August and 2 in June. I am also off the first week of September the week the girls go back to school. Its nice being home, I haven't been a full time stay at home mom since the girls were a year old. I am really enjoying it and not looking forward to going back to work next week UG. I think its the rushing morning routine I am most dreading.

You know, when I think about it, there are very few stay-at-home moms, anymore, aren't there? Whether it's by desire or necessity, I think most of the women I know do some kind of work outside the home. I'll be thinking about you as you head back, Sydney. It's always tough going back to work after a vacation.

My dinner Friday night was a grilled Asian salad at Applebee's. Can you believe I have never been to an Applebee's before? They built a new one here in town, near our (relatively) new Super Walmart, so a gal from work and I went there for dinner. We were going to do a movie, like we often do on Friday nights, but nothing looked interesting. So, we just went out to eat and chatted for awhile. It was a fun evening.

Last night, I roasted some cauliflower and had leftover chicken cordon bleu. Not very exciting, huh, but the cauliflower was tasty. I love that stuff! I don't know what's for dinner tonight. I still need to go to the store.

You'd lose that bet! I decided to get all creative and make sushi. (It was lame to quite lame - I think I'd better take one of the one day sushi cooking classes that are offerred at a local restaurant. Lol)
I tossed it and went over to The Works and picked up a couple of "Weeds and Blackened Chicken" salads. Much better.

Well today I canned my peach jam and peach salsa. They look good, will let you know if they are a keeper. The salsa recipe said it would make 8.5 pints but it only made 5 so don't know what is up with that.

Too funny, Jessie! I can't imagine any dish you make turning out bad! If you ever want to prank the family, ask them if they'd like some sushi . . . and serve them this:


Crisp Rice Cereal Sushi
from the California Grill, Contemporary

8 fruit roll-ups
1/4 c. butter
10 oz. miniature marshmallows
6 c. Rice Krispies
16 Gummi worms or
24 Swedish fish

Unroll fruit & place plastic down on cutting board; set aside. Melt butter; add marshmallows, stirring until melted. Remove from heat; stir in cereal until blended. Spread 1⁄2 c. cereal mixture quickly over each fruit roll, leaving a 1” border on 1 long side. Put 2 worms or 3 fish lengthwise down center. Begin rolling on side without border. Press to seal. Cut into 4 slices. Repeat with remaining ingredients. Serve with chopsticks, if desired. Yield: 32 rolls.

NOTE: The instructions don't say this, but it is important to leave the fruit roll-up on the plastic - only remove it as you roll the sushi! Otherwise all those cut-outs in the new fruit roll-ups will pop out leaving gaps & look weird!

I've never made this, but I've seen it, and it looks just like sushi. They serve it at Disney's Food & Wine Festival, for the kids. Laughing

I can't wait to hear how your peach salsa turned out, Granny! Making salsa . . . delivering babies . . . you've been a busy gal, lately.

I had a busy day at work, yesterday, but took a break at noon to eat some more of icecoffee's wonderful chicken salad on lettuce. You'd think I'd be tired of it by now, wouldn't you, but no way. In fact, I'm having it again for lunch today. Laughing

I was pretty tired when I finally got home from work last night, but I did go ahead and make that low carb pizza. It goes together so quickly that I had dinner on the table in no time . . . well, about 30 minutes. A slice of pizza and a green salad hit the spot.

I canned two more kinds of peach salsa. One was peaches and peppers, etc but no tomatoes...had lime juice and sugar...............tasty.

The second was kind of like the first one that I did on Monday with some tweaks....like salt, pineapple and a little corn starch to thicken it a little....it is pretty tasty also.
