Chocolate Cherry Cake
1 chocolate fudge cake mix
2 eggs, beaten
1 can cherry pie filling
2 t. almond extract
Mix all ingredients together by hand, stirring well. Put into greased and floured 9x13-inch baking pan. Bake at 350 degrees for 20-30 minutes.
Frosting:
5 T. butter
1/3 c. milk
1 c. sugar
1 (6-oz.) pkg. chocolate chips
Combine butter, milk and sugar in saucepan. Bring to boil, and boil for 1 minute, stirring constantly. Remove from heat, stir in chocolate chips, then pour over cake.
Note: I double the frosting ingredients, which makes a dandy layer of frosting, almost like fudge. When I take this to potlucks or tailgate parties, it is gone almost before the pan hits the table. And, if you want to totally overdo it, feel free to serve with ice cream or whipped cream and top each serving with a long-stem maraschino cherry. Bam!! (as Emeril would say ).
