This is from my very first cookbook--a red and white plaid, spiral-bound Better Homes and Garden--the very first recipe I remember making (for Grandpa in his old electric skillet.) The page is falling out of the book now, but the recipe's still as good as it was then. SPECIAL NOTE: Grandpa wasn’t a veggie eater, but mushrooms are good in this, too. Just add them when you add the water and chopped onion. Cheese Steak 2 lb. 1/2" thick round steak
1/4 c. all-purpose flour
1/2 t. salt
1/4 t. garlic salt
1 c. water
1/4 c. chopped onion
1/2 c. shredded sharp cheddar cheese
2 T. chopped parsley (optional)
Cut round steak in 6 to 8 pieces; pound to 1/4". Combine flour, salt, and garlic salt. Dredge meat in mixture. Brown slowly in 3 T. hot fat. Add water and chopped onion. Cover; simmer 1 hour or until tender.
Sprinkle with shredded cheddar cheese and chopped parsley. Cover; cook 2 to 3 minutes or until cheese melts. Makes 6 to 8 servings.
