| I wanted to contribute Ingredients
- 6 ounces garlic-flavored croutons
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1 teaspoon dried thyme
- 1/2 onion, roughly chopped
- 1 carrot, peeled and broken
- 3 whole cloves garlic
- 1/2 red bell pepper
- 18 ounces ground chuck
- 18 ounces ground sirloin
- 1 1/2 teaspoon kosher salt
- 1 egg
For the glaze:
- 1/2 cup catsup
- 1 teaspoon ground cumin
- Dash Worcestershire sauce
- Dash hot pepper sauce
- 1 tablespoon honey
DirectionsHeat oven to 325 degrees F. In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat. Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees. Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes. |

| That's awesome, let me know how the boys like it. I wouldn't be surprised if they're askin' for more Bitchin' Meatloaf! Well you could substitute the name if they are little ones. |

| This is the second new meatloaf that I have copied this week but when I make meatloaf next week, I think that I will try yours first Witty. | I have a confession. The first thing I saw when I arrived back today was the word 'Bitchin' and that's the first place I went to LOL Not the 'Bitchin' I expected but the recipe looks amazing! Mexican Mealoaf...well that's what the ingredients made me think of. I can't wait to try this. What do you serve with it Witty? My little brain went in 20 directions... eventually ended up with leftovers as sandwiches.. with sour cream, salsa, a bit of avocado LOL I'm such a recipe and food Ho. Thanks for sharing! |

| Witty--- I made this meatloaf today.....Wow. First I cut the recipe in half but followed all the directions. The smells coming out of that oven while it was baking....had my dog and I drooling. Made my whole apartment smell wonderful. It held together very well and cut easily. This is definitely a keeper. Goes to the top of my list of great meatloaf. The taste was so blended between spicy and sweet....perfect. Thank you for sharing this recipe. I am very grateful. | DH just arrived home and asked what smelled sooooo good I decided to make corn and black beans with cilantro and a bit of cumin and garlic mashed potatoes and salad .... it'll be a hit or a miss. Trial and error  |

| Excellent! I reduced the recipe to one pound of meat since this was the first time I made it. I had everything else on hand. I used one large clove of garlic, a large handful of croutons, three baby carrots, about an inch round of red bell pepper, still used a whole egg. When it came to the cayenne, I cut that waaaaaaaaay back LOL I don't like things that hot so I used about 1/8 tsp of cayenne, 1/2 tsp or more chili powder, many grinds of fresh black pepper and the kosher salt and whatever else was called for. The cayenne made it's presence known without killing my tastebuds lol The parchment paper made clean up so easy! I'll be using it for more than baking in the future lol The loaf was moist and very flavorful. DH also added some salsa to his plate. Surprisingly, the mashed went well with the blackbeans and corn. Next time, I'm going to make my usual blackbeans, corn and rice dish and I'll have some sour cream on hand for myself. Excellent! Thank you Witty! This one's a keeper and my girls are asking for the recipe  |
