Another simple recipe that kids and adults seem to love, and no, I don't have a clue how it got it's name.

Big Bertha

Saute:
1 lb. lean ground chuck
1/2 c. green onion, sliced
2 cloves garlic minced

Add:
2 cans (14 1/2 oz.) stewed tomatoes
1 pkg. taco seasoning mix
1 small can chopped green chilies
1 small can sliced black olives

Simmer for about 20 minutes.

Other ingredients needed:
1 pkg. Doritos (14 oz.)
1/2 lb. Monterey jack cheese, shredded
1/2 c. cheddar cheese, shredded
1 pt. sour cream

In a 9 X 13 pan, layer half of the pkg. of Doritos. Add meat mixture on top, then the Jack cheese, next the sour cream, and then the rest of the chips. Cover with foil and bake at 325 for about 15 minutes. Uncover, then add the shredded cheddar cheese and finish baking, about 15 more minutes. Serve with taco sauce.

Last weekend, we were reminiscing and my daughter mentioned this dish -- Big Bertha (I almost typed Big Brother) -- which was one of things I made ahead and froze, when her youngest daughter was born. I stocked their freezer, and all they had to do, when they got home from the hospital, was add cheese, reheat, and eat.

Anyway, the grandkids love this, and asked me to make it tomorrow so that's what I'm doing. I'll make a double batch for the whole crew. I'll also use ground white meat turkey instead of chuck, multi-grain tostitos, and light sour cream, but they won't know the difference.
