Beyond the Grave Chicken Salad



5 lbs. chicken breasts
2 quarts water
parsley sprigs

1 large onion, quartered
1 tsp. seasoned salt
2 chicken bouillion cubes

In large pot, bring water and seasoning to boil, add chicken, lower
heat and simmer 40 min. Remove from heat, cool. Shred chicken and
refrigerate.Dressing:


1/2 cup bottled Italian salad dressing
1 cup Duke's mayonnaise
1 Tbsp. white vinegar
1-1/2 tsp. celery seed

2 Tbsp. sugar
1/8 tsp. salt
dash paprika

Blend well together.For salad:


Toss shredded chicken with one cup of dressing and let stand at least one hour to marinate.

Combine remaining dressing with:
1/2 cup sour cream
1 Tbsp. honey

Add to chicken and mix well. May add canned water chestnuts, blanched almonds or chopped pecans.

Well, I've never eaten anything from beyond the grave, but I think I'm going to have to give this recipe a try. Very Happy You must know how much I like chicken. Cluck. Cluck. And celery seed. I wonder how in the world this recipe got its name. Do you know?

I made your chicken salad, today, icecoffee, and I want you to know that it's the best chicken salad I've ever made. I'm going to use this recipe from now on. Thank you so much for taking the time to share it with us!

I did substitute Splenda in place of the sugar, and I added slivered almonds, as the recipe suggested. I think I ate too much, though, because I am stuffed.

Thanks again, for sharing your recipe with us. It's a "keeper" at my house.

Enjoyed it? I loved it!! I think I ate it almost every day this week. I kept thinking I'd get tired of it, but nope. That just didn't happen. In fact, I wish I had some with me here at work, right now.

I spent a good part of Saturday and yesterday updating our recipe index. It's amazing how many wonderful recipes I missed adding, when they were first posted. My apologies to anyone who wondered why their recipe wasn't included in the index. I'll just plead Alzeimers, and we'll leave it at that.

Anyway, while I was updating the index, I ran across this recipe and figured I'd give it a bump for those who may not have seen it, first time around. I love this stuff and just made another big batch yesterday afternoon. Umm ummm ummm. That's what I'm having for lunch.
