Baked Salmon Dijon

1 c. fat free sour cream (or light or regular)
2 t. dried dill
3 T. green onions, finely chopped
2 T. Dijon mustard
2 T. lemon juice
1 1/2 lb. salmon fillet with skin, cut in center
1/2 t. garlic powder
1/2 t. black pepper
as needed fat free cooking spray

Whisk sour cream, dill, onion, mustard, and lemon juice in small bowl to blend.

Preheat oven to 400 degrees F. Lightly oil baking sheet with cooking spray. Place salmon, skin side down, on prepared sheet. Sprinkle with garlic powder and pepper, then spread with the sauce.

Bake salmon until just opaque in center, about 20 minutes. Enjoy! Makes 6 servings.

NOTE: I love serving spicy baked sweet potatoes 'fries' and steamed broccoli with this salmon. It's a great quick meal -- ready in under 30 minutes.
