| This recipe came from an e-zine, which I used to receive, and the meatballs are every bit as good as described! The story that came with them is pretty cute, too. The original author is right. You'll get lots of requests for these. Oh, and you need to know. These are not "spaghetti and meatball-style meatballs. These are "stand on your own, 'cause you're that good" meatballs!! Aunt Evelyn's MeatballsHi there from Alaska! This recipe came from my Aunt Evelyn, a retired farm wife in Kansas. She is famous in Kansas for these 'baseball sized' meatballs and now I am famous for them in Alaska. But I still give credit where credit is due! If you ever take these to a church potluck, watch out! You will be asked to bring them again and again. Once, I even heard our pastor say from the pulpit, when announcing a potluck, "and we all hope, of course, that Bonnie brings Aunt Evelyn's meatballs!"3 lb. ground beef 1 t. minced garlic 1 large can (12 oz) evaporated milk 1/2 c. chopped onion 2 eggs, beaten slightly 2 c. oatmeal 1 T. salt 1 T. pepper 2 T. Italian seasoning flakes (optional) 1/4 c. grated parmesan cheese (optional) Mix well. Shape into 24 large meatballs. Place into large baking dish (13x9"). Spoon sauce over meatballs. Bake, covered loosely with foil, 1 hour and 15 minutes at 350. Sauce:1/2 T. minced garlic 2 c. ketchup 3/4 c. brown sugar 1 medium onion, diced 1 T. cider vinegar 2 T. liquid smoke flavoring (optional) Mix well and spoon atop meatballs. Bake as directed. _________________ MODERATOR Counting down the days till our next trip . . . |
